Strawberry Cake



I had a large punnet of strawberries well on their way to expiring in my fridge! waiting to be put to good use.


So I called on a trusty friend for baking inspiration...Google of course.
I found the original recipe at Martha Stewart (tried to reduce the sugar content a little!) and whipped up this delicious strawberry cake during a tea break.


To bake one yourself, you'll need:
1 and 1/2 C flour,
2 t baking powder,
pinch salt,
85g butter,
7/8th C light brown sugar and 2 t for sprinkling,
1 egg,
1 C milk,
1 t vanilla paste,
400-500g strawberries


Wash and halve the strawberries.
Sift the flour, BP and salt into a bowl.
Mix the butter and sugar until light and creamy.
Mix in the milk, egg and vanilla.
Add the dry ingredients and mix together.
Pour the batter into a buttered cake tin.
Arrange the strawberries on top of the batter.
Sprinkle a little sugar lightly over the top.


Bake at 175ºC for 10 minutes.
Reduce the temperature to 160ºC and bake for a further 60 minutes.


Wait until it has cooled to serve. Who am I kidding, tuck right in and enjoy a delicious warm slice of strawberry cake...even better served with a generous dollop of double thick cream.
This cake smells so delicious when you open the oven and leaves your kitchen smelling of strawberry fields...hmmm hmmm...which reminds me, after today we are heading back towards Summer! That makes this girl very happy indeed.
